Pecorino Foglie Noci owes it fresh, intense flavour to the aroma released by the fresh walnut leaves it is wrapped in. After an initial aging period of about one month, the wheels are carefully selected and the fresh Pecorino wheels are aged for another 30 days between layers of freshly picked walnut leaves which, thanks to the reactivated fermentation and enzymatic processes, give the cheese its unique aroma and flavour.
