Born as a tribute to the 500th anniversary of Raphael’s death, painter and architect form Urbino
It is a 60 days ripened cheese, small sized, with a white and crumbly curd. At the end of the ripening process it’s treated on the surface with tomato concentrate, which grants a better preservation of the product, and gives it the characteristic red colour – known today as “Red of Raphael”.
