Tradition embraces the taste
Produced with sheep milk; when eaten fresh, its delicate fragrance is predominant. It does not require long aging: about 10 to 15 days; the wheel is round, it has a thin, yellow white rind. The white curd remains tender, soft and crumbly with tiny holes.
