A flower of cheese

Is a mixed cheese made with cardoon vegetable rennet, extracted from the thistle flower and produced with high quality ewe’s and cow milk, mainly sourced locally, characterized by a sweet and palatable taste. Ideal for sea- soning first courses and baked pasta, or as a simple side dish, light and nutritious, accompanied by fresh salads and seasonal vegetables.
