
Mixed cheese with the addition of sage
The formaggio stagionato in Giara alla Salvia becomes part of the Giare and Giarine line. It is an aged cheese refined in terracotta jars with the addition of sage. The ripening in the sage gives the cheese a particular and a beautiful floral component.
Our jar-aged cheeses, crafted from a masterful blend of cow’s and sheep’s milk, embody the essence of traditional cheesemaking through time-honored artisanal techniques. Every step of the process is meticulously overseen to create a perfectly balanced product, rich in authenticity and character. Aged for a minimum of 40 days, these cheeses undergo an extraordinary 30-day refinement inside terracotta jars. This unique method fosters a slow, harmonious maturation, creating an ideal microclimate that enhances aromas and enriches texture. Throughout this process, carefully selected natural ingredients infuse each cheese with distinctive flavor nuances. The special environment within the jars also causes the cheese to take on a slightly irregular shape, a hallmark of true artisanal craftsmanship and uniqueness. But our dedication to detail doesn’t stop there. Once fully matured, each cheese is vacuum-sealed and elegantly packaged with twine and a dedicated tag, telling the story of its tradition, the craftsmanship that makes it exceptional, and the passion behind every stage of its creation.
