Several historical sources narrate that Marco Porzio Catone collected the rules that regulate the usufruct of sheep farming in republican Rome, where sheep’s milk had three different destinations: religious-sacrificial, food as a drink and gastronomic (for the transformation into cheeses with residual use of the whey to obtain ricotta).

It represents our very fresh DOP certified product. Which must be produced according to strict regulations, the salient point is the use of whole sheep’s milk, produced and collected from certified farms in Lazio. This milk gives the ricotta its creamy appearance and its intense aroma which is due to the fundamental freshness of the milk.
