Ewe’s milk ricotta is known for its delicateness, the result of a very careful process during which fresh milk is added for an even more tender and delicate ricotta. Perfect alone, but it can also be flavored with sugar, or chocolate. It can be used in the preparation of delicious first course dishes like ravioli and cannelloni.
