Fresh and sweet
This cheese has ties to the ancient transhumance traditions. Made from cow and sheep milk, it is aged for a short time before it is ready to be eaten. It has a smooth, compact curd, pale yellow in colour and a smatter- ing of small, regularly distributed holes.
